- 1 1/2 cups (10 oz.) of cooked garbanzo or cannellini beans (heated)

- Pinch of sea salt (to taste)
- Fresh herbs, herb flowers, or reserved celery leaves (finely chopped)
Directions:
- 1. Slice the celery into thinner stalks, about 1/8-inch or so.
- 2. In a small mixing bowl, combine the parmesan, olive oil, and lemon juice to make a paste.
- 3. In another larger bowl, toss the beans with the parmesan mixture.
- 4. Then add the celery, raisins or currants, and most of the almonds.
- 5. Taste and add a bit of sea salt if required.
- 6. Before serving, sprinkle the rest of the toasted almonds and a little bit of grated Parmesan on top.
